  • 1 cup chopped spinach (optional)
  • 2 green onions, finely chopped
  • 1 tablespoon soy sauce (increase as desired)
  • 1 teaspoon sesame oil (optional)

Instructions:

Prepare the Broth: 

In a pot, bring the vegetable or mushroom broth to a gentle simmer over medium heat.

Avoid boiling the broth to preserve the delicate flavors.

Add Tofu and Vegetables: 

Add cubed tofu, sliced shiitake mushrooms and rehydrated chopped wakame seaweed to the simmering broth.

Allow the ingredients to cook for about 5-7 minutes until the tofu is heated through and the vegetables are tender.

Dissolve Miso Paste: 

In a small bowl, dissolve the miso paste in a few tablespoons of hot broth from the pot.
