Tofu and Vegetables Stir Fry - Easy Vegan Meal

This a vibrant and nutrient-packed dish that brings together the wholesome goodness of tofu, crisp bok choy, crunchy broccoli, and sweet carrots. It's a feast for the eyes and also a celebration of textures and flavors that will leave your taste buds singing. 


For the Tofu:

  • 1 block extra-firm tofu, pressed and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch

For the Stir Fry:

  • 2 tablespoons coconut oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups broccoli florets
  • 2 cups bok choy, chopped
  • 1 cup carrots, julienned
  • 1 snap peas (optional)
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sesame seeds (optional for garnish)


Prepare the Tofu: 

Press the tofu to remove excess water, then cut it into cubes. In a bowl, combine soy sauce, sesame oil, and cornstarch. Toss the tofu cubes in the mixture until evenly coated.

Set aside to marinate for at least 15 minutes.

Cook the Tofu: 

Heat vegetable oil in a large wok or skillet over medium-high heat. Add the marinated tofu cubes and cook until golden brown on all sides.

Remove the tofu from the pan and set aside.

Sauté Aromatics and Vegetables: 

In the same pan, add a bit more vegetable oil if needed. Sauté minced garlic and ginger until fragrant. Add broccoli florets, bok choy and julienned carrots.

Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.

Create the Sauce: 

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil.

Pour the sauce over the stir-fried vegetables.

Combine Tofu and Vegetables: 

Return the cooked tofu to the pan, tossing everything together to coat evenly with the sauce.

Cook for an additional 2-3 minutes until the tofu is heated through.

Garnish and Serve: 

Sprinkle sesame seeds over the tofu stir fry.

Serve over cooked rice if desired.
